‘Sueños’, which translates to ‘dreams’ in English, is the name of Yamile Roldan’s farm in Puerto Quito, Ecuador. The ‘dream’ realized at Finca Sueños, and by all of the other farming families of the Asociación Nueva Esperanza organic cooperative, is to conserve through cultivation rare heirloom ‘Nacional’ cacao varieties.

‘Nacional’ cacao is native to the Northwestern Amazon and has been grown in this region for thousands of years. ‘Nacional’ varieties are low-yielding and comprise only ~5% of Ecuador’s current cacao crop, but this heirloom cacao is world-renowned for its exceptional aromas and flavors, and lack of bitterness. All Nueva Esperanza families are committed to growing heirloom Nacional varieties with organic, agro-ecological methods that are regenerative for environmental and human health.

I directly import cacao grown with love from Finca Sueños and other Nueva Esperanza Cooperative farmers to Boston, where I make small-batch vegan dark chocolates with a seasonally-changing variety of dried fruits, nuts and seeds.
