I always loved a steaming bowl of Erwtensoep (pea soup) during my years in the Netherlands, but even before ditching the pork in my own diet I was a bit put off by the giant chunks of smoked sausage that overpowered the taste of the rest (and usually came from a plastic package!). This vegan take on pea soup gets its flavor from the veggies, white wine, Dijon mustard and of course Drew's veggie stock. Drizzle some Zaazey on top and tear off a chunk of baguette, and this chunky soup is complete!
